WARM PAPRIKA, TOMATO AND BABY POTATO SALAD

INGREDIENTS:
5 cups baby potatoes, peeled and par-boiled
1 cup onion wedges
3 tsp olive oil

Mix the ingredients together.
Roast for 15 minutes in the oven at 200 degrees centigrade till slightly
browned.

DRESSING:
½ cup sweet chili ? sauce
2 tsp paprika
1 tsp garlic, crushed
3 tsp tomato ? paste
4 tsp olive oil
2 tsp chopped coriander
Salt and pepper

Mix the ingredients together.
Pour over potatoes, mix to combine.
Roast potatoes at 180 degrees centigrade for another 10-15 minutes.

SALAD:
1 pkt basil ? leaves
1 pkt rocket leaves
½ cup crispy bacon ? bits

Combine basil ? and rocket on a serving platter.
Top with warm potatoes ?
Drizzle with left-over dressing.
Top with bacon ? bits.
