500 g minced meat
1 Tbls olive oil
1 onion, finely chopped
1 red pepper, chopped
1 Tbls garlic, crushed
2 Tbls tomato paste
1 ¾ cup kidney beans
1 cup cheese, grated
Heat oil in frying pan, cook onion, garlic and pepper until tender.
Add the mince and cook till browned.
Add tomato paste and kidney beans.
Cook until minced meat is done.
Place one tortilla at the bottom of a cake tin, add some mince and sprinkle with cheese. Repeat layers 4 times.
Place in the oven till cheese has melted.
Cut into wedges.
