TOMATO, FETA AND BUTTERNUT CHICKEN POT PIE

INGREDIENTS:

1 puff pastry (cut into circles)

Sesame seeds

Egg wash

FILLING:

2 Tbls vegetable oil

½ cup onion, finely chopped

2 tsp garlic, minced

400 g chicken breast, cubed

1 tsp chicken spice

2 cups tomato and herb pasta sauce

1 cup roasted butternut, cubed

½ cup peppered feta, cubed

METHOD:

Fry the garlic and onion in oil till soft.

Add the chicken and chicken spice and brown.

Add pasta sauce and bring to the boil.

Adjust seasoning.

Remove from the heat, fold in the roasted butternut and feta.

Fill the ramekins 2/3 full with the filling.

Cover with pastry circles.

Make a small slit on-top and egg wash.

Sprinkle with sesame seeds.

Bake for 20-30 minutes at 190 degrees Celsius.

Chicken Pot Pie ?? Perfect comfort food.

The individual portions make it fun to it and good for portion control.
