3 Tbls sunflower oil
4 spring onions, chopped
2 tsp minced ginger
2 tsp crushed garlic
1/2 red pepper, julienned
1/2 yellow pepper, julienned
1 cup bean sprouts
1 carrot, strips
1/4 small cabbage (1 cup) shredded
2 tsp soy sauce
Salt and pepper
12 spring roll sheets
1/4 cup chopped fresh coriander
Sweet chili sauce to serve
Saute’ the onions, ginger and garlic in oil.
Add the rest of the vegetables. Saute’ until cooked.
Season the veggies with soy sauce and salt and pepper.
Place coriander onto each spring roll sheet. Top with veggies.
Roll into tight roll.
Serve with sauce.
