STICKY TOFFEE PUDDING

INGREDIENTS:
1 cup water
1 ½ cup chopped, pitted dates
1 tsp baking soda
¼ cup candied ginger, chopped
¼ butter, softened
1 ½ cups flour
1 tsp baking powder
½ tsp salt
1 cup sugar
1 tsp vanilla essence
2 large eggs

TOFFEE SAUCE:
¾ cup brown sugar
2 Tbls golden syrup
½ cup heavy cream
¼ cup butter
2 Tbls Cointreau
1 tsp vanilla extract

METHOD:

In a medium bowl, whisk flour, baking powder, and salt. Set aside.
In another bowl, cream butter and sugar together. Beat in vanilla and 1 egg
until well incorporated.
Add the dry ingredients and dates and mix well.
Spoon into prepared muffin tins and bake for 15-20 minutes at 180 degrees C.
Cool for 15 minutes.

SAUCE:
Bring all the ingredients up to a boil.
Boil gently for 5 minutes. Keep stirring.
Remove from heat, add Cointreau and vanilla.
Spoon warm sauce over pudding.

Serve with cream or ice-cream.
