SPICY FRUIT BREAD

INGREDIENTS:
150 g cake fruit mix
65 ml orange juice
480 g cake flour
10 g instant yeast
65 g sugar
5 ml salt
10 ml ground cardamom
10 ml ground ginger
10 ml ground cinnamon
1 large egg
60 ml butter
375 ml lukewarm milk

SUGAR GLAZE:
80 ml water
30 ml castor sugar

METHOD:

Preheat oven to 180 degrees C. Grease a loaf tin.
Soak the fruit mix in orange ? juice for at least an hour.
Mix all the ingredients ingredients.
Add the soaked fruit.
Mix milk and butter and add to dry ingredients.
Form a soft dough and knead for 10 minutes.
Allow to rise and double in size.
Knock down and shape into roll that fits on the loaf tin.
Allow to rise again.
Bake for 35 minutes or until golden brown.
To make syrup, heat the water and sugar until sugar dissolves.
Brush over bread as soon as it comes out of the oven.
