1 whole fresh snoek
3 Tbls apricot jam
2 Tbls sweet chili sauce
1 Tbls crushed garlic and ginger
1 tsp fish spice
Juice of 1 lemon
1 Tbls olive oil
Salt and pepper to taste
In a small bowl, mix all the ingredients together (except the fish),l.
Place the dish, skin down on a greased oven pan or grill and spread the jam
mixture generously on the fish.
Season with salt and pepper.
Braai over medium coals for about 25 minutes, turning after 15 minutes.
Don’t overlook the fish, it should flake easily.
Serve with garlic bread, potato salad or Greek salad ?
