SAUCY SPANISH CHICKEN PARCELS

INGREDIENTS:
12 boneless chicken thighs, skinless
12 peppadews, chopped
½ cup roasted peppers, chopped
¾ cup spicy chorizo, chopped
½ cup feta cheese
12 slices streaky bacon ?
Salt and pepper
Oil for frying

METHOD:

Mix peppadews and following 3 ingredients together.
Stuff the thighs.
Wrap the stuffed thighs in bacon ?
Season.
Brown the chicken in oil. Place in an oven dish and set aside.

SAUCE:
2 tsp olive oil
1 cup finely chopped red onion
2 tsp crushed garlic
1 pkt sundried tomato and olive pasta sauce
½ cup sherry
2 tsp basil ?, finely chopped
18 green olives
½ cup extra feta- for garnish
Chopped olives, for garnish

METHOD:

Sauté onion and garlic in olive oil. Add pasta sauce, sherry and basil.
Pour over chicken in the oven dish.
Bake covered for 20 mins at 180 degrees.
Add olives, adjust seasoning and cook uncovered for 5 minutes.

Garnish and serve!
