SAMP WITH CREAMY SPINACH AND MUSHROOMS

INGREDIENTS:
65 g butter
1 bunch spring onions, finely chopped
10 ml crushed garlic
1 can Cream style sweet corn ?, drained
250 ml chopped mushrooms
Salt and pepper
750 ml cooked quick samp
300 g baby spinach
125 ml cream
250 ml vegetable stock

METHOD:

Sauté spring onion and garlic in butter till soft. Add sweetcorn, mushrooms
and seasoning.
Add samp and spinach. Simmer for 5 minutes.
Slowly add cream and stock.

Serve warm!
