SALSA VERDE

INGREDIENTS: 

2 cloves garlic 

2 handfuls fresh parsley  

1 bunch basil 🌿  

1 handful mint 

1 handful capers  

1 handful gherkins  

6 anchovy fillets 

3 Tbls Dijon mustard  

3 Tbls red wine vinegar  

8 Tbls olive oil   

 

METHOD:

Peel garlic and pick herbs and finely chop.  Finely chop capers, gherkins and anchovies. Place in a bowl with herbs.  

Add mustard and vinegar then slowly stir in the oil until desired consistency.  

Adjust seasoning.  

Serve with sourdough bread 🥖 or grilled fish.
