15 ml sunflower ? oil
1 onion, chopped
10 ml crushed garlic
1 brinjal, diced
1 red pepper, diced
2 large tomatoes ?, peeled and diced
Salt and pepper
1 can baked beans
15 ml chopped fresh basil ?
750 ml water
250 ml fine maize meal
50 g butter
100 g grated mozzarella cheese
Sauté onion and garlic in oil till soft. Add brinjal, peppers and tomatoes.
Cook for 5 minutes. Adjust seasoning.
Add beans and basil. Stir and heat through.
Bring water to the boil. Add maize meal gradually. Whisk constantly.
Reduce heat and simmer. Stir with wooden spoon until mixture thickens and
pap is soft.
Add butter and cheese.
Preheat grill on medium. Divide veggie mixture into 6 ramekins.
Top with a layer of pap. Grill for 10 minutes.
Garnish with extra basil.
