PAN-ROASTED BRUSSEL SPROUTS

Serve this as a vegetable side or a warm salad.

INGREDIENTS:
6 strips bacon ?
2 Tbls butter
½ cup onions, finely chopped
1 tsp garlic, crushed
Salt and pepper
1 kg Brussel sprouts, blanched and halved
1 cup sweet chili sauce
¾ cup mozzarella slices
2 tsp chopped fresh basil ?

METHOD:

Cook bacon till crispy, chop and set aside.
With the bacon fat, melt butter and cook onions, garlic and brussel sprouts.
Cook for 8-10 minutes.
Season.
Toss in the bacon ?
Pour in The sweet chili sauce. Top with cheese and garnish with basil ?
