ONE POT BRAZILIAN CHICKEN RICE

INGREDIENTS :
6 pieces Chicken thighs
Salt and pepper
3 Tbls dried oregano
3 Tbls vegetable oil
1 onion, diced
1 head garlic, minced
2 cups of fresh corn ?
2 ½ cups rice ?
2-3 cups chicken stock
1 Tbls tumeric
2 limes ?
Parsley for garnish

METHOD:

In a pot, on medium heat, add oil.
Add chicken and brown it for 2 minutes on each side.
Add onion and garlic. Cook for 1 minute.
Add tumeric, oregano and mix.
Add corn and rice. Cook for 1 minute.
Add stock and cook till rice is soft. Adjust seasoning.
Add lime and parsley for garnish.
