NACHOS AND ACCOMPANIMENTS

So…. we had our 4th Pop-up restaurant the past Saturday.
It was at a beautiful guesthouse in Hatfield, Pretoria.
It’s called Ça Ira Wellness Resort and Guesthouse. ..Absolutely amazing.

It was a champagne breakfast Pop-up. It was too good to miss.
We shad so many yummy food, but to start the people off, we had some nacho chips and homemade sides.
And champagne of course.

ONION AND BEAN RELISH:
3 Tbls olive oil
1 onion, finely chopped
2 Tbls crushed garlic
2 Tbls chopped ginger
1 Tbls medium curry powder
4 chopped tomatoes
½ cup vegetable stock
1 can baked beans
2 Tbls soup thickener/ corn starch
Salt and pepper

Sauté the onion, garlic and ginger in the oil till transparent.
Add the curry powder and cook for 1 minute.
Add the tomatoes and beans.
Add the stock and cover and simmer for 10-15 minutes.
Thicken if it’s too runny.
Adjust seasoning.

MAYO DIP:
1 cup mayonnaise
½ cup gherkins, chopped
Salt and pepper
¼ cup lemon juice

Mix together till blended.

Serve with nachos.
