500 g cake fruit mix
125 g butter
150 g dates, chopped
1.5 cup rooibos tea or water
½ cup sugar
1.5 cup peach Chutney
1 tsp bicarb
½ cup cherries, chopped
½ cup chopped pecans or walnuts
2 eggs, beaten
½ cup brandy
Boil all the ingredients together.
Make sure the ingredients are mixed well together.
Once boiled, remove off the heat and leave it to cool down.
2 cups cake flour
2 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
1 tsp ground mixed spice
Sift the ingredients together.
Fold in the ingredients into the boiled mixture.
Pour mixture into a prepared cake tin.
Bake at 180 degrees centigrade for 1.5 to 2 hours until cake is baked
Decorate with whole cherries and walnuts and brush with extra brandy on top
for more flavor.
