MIXED MUSHROOM CURRY

INGREDIENTS:
500 g mixed mushrooms, chopped
45 ml oil
10 baby onions, halved
2 cloves garlic, crushed
5 cm ginger, grated
1 red chili, chopped
5 ml tumeric
5 ml mustard seeds
10 ml medium curry powder
500 g mixed cherry tomatoes
45 ml mango achar
400 g coconut milk
100 g mozzarella cheese
2 limes
400 g basmati rice
Coriander bunch

METHOD:

Sauté the mushrooms in butter for 5-8 minutes.
Sauté the onion, ginger, garlic and chili in the oil. Add the rest of the
spices. Sauté until the spices are fragrant.
Add the tomatoes and achar and cook for a few minutes.
Add the milk and cheese to the stew. Cook until the stew is a desired
consistency.
Adjust seasoning.

Serve with lime and rice and garnish with coriander.
