MARSHMALLOW FILLED CHOCOLATE CUPCAKES

INGREDIENTS:
1 box choc cake mix
Eggs
Milk
Oil
(According to box instructions)

BUTTER ICING:
Box icing sugar
125 g butter, melted
2/3 cup Mobil
2 tsp vanilla

MARSHMALLOW FILLING:
10 large marshmallows
2 Tbls light corn syrup
2 cups icing sugar
2 Tbls milk
Chocolate for decorating

METHOD:

Preheat oven to 180 degrees C. Line muffin tin.
Make cupcakes according to instructions.
Fill up to 2/3 into the muffin tin. Bake for 18 minutes.

ICING:
Pour in melted butter into bowl, mix in cocoa icing. Add in 3 cups of icing
sugar. Mix well. Add in milk and vanilla. Stir.

MARSHMALLOW:
In a large bowl, combine marshmallows and corn syrup together.
Heat for 1 minute. Stir well. Add to a mixer bowl. Mix in 2 cups of icing
sugar. Mix well.
Core out the centre of the cupcakes with a knife. Fill with marshmallow
filling, and place the cored piece back on.
Decorate cupcakes by piping rosettes of butter icing ontop.
Decorate with chocolate.
