it’s never too early to have dessert.
This is a popular South African dessert, perfect for anybody who wants to
be on a sugar high ?
You will need:
¾ cup castor sugar
1 Tbls apricot jam
1 ¼ cup self-raising flour
1 tsp baking powder
1 tsp melted butter
1 tsp vinegar
1 cup of milk
1 tsp bicarbonate of soda
Pinch of salt
Beat together sugar and eggs.
Soft the flour, baking powder and salt.
Mix vinegar, milk, bicarb together. Add the dry ingredients to the wet. Mix
Bake at 180 degrees Celsius for 20-30 minutes.
While that’s in the oven, make the sauce.
2 Tbls butter (melted)
¾ cup sugar
1 tsp vanilla essence
1 cup of cream (double or single, your choice)
1 tin evaporated milk (300g)
Melt the butter and sugar. Add the vanilla, cream and evaporated milk and
heat it up.
Pour it over the warm pudding till it all soaks up.
Serve warm with some custard or ice-cream.
