LOADED BBQ PORK POTATO CASSEROLE

INGREDIENTS: 

45 ml oil 

750 g pork steak, cut into strips 

8 red skin potatoes, peeled and diced 

250 g cream cheese, softened  

50 g buter, softened  

250 g bacon 🥓, cooked and crumbled 

6 spring onions, thinly sliced 

150 g grated cheddar cheese 🧀, divided   

 

METHOD: 

Lightly grease a casserole dish.  Heat oil and brown the pork. Add water and cover and cook for 30 minutes until tender.  

In the meantime, boil potatoes in salted water till tender.  Mash potatoes together with cream cheese and butter. Mix in bacon, spring onion and half of the grated cheese.  

Heat oven to 180 degrees C.  

Transfer mash into prepared casserole dish.  Top with cooked pork and cover with remaining grated cheese.  

Place in oven until cheese is melted, about five minutes.  

Top with additional spring onions if desired.   Serve warm!
