LEMON-CHEESECAKE ICE-CREAM CRUMBLE TOPPED WITH APRICOT SLICES

Enjoying the days of summer with refreshing desserts.
Perfect for whatever type of day you’re having.

Cheesecake Ice-cream:
Whisk together a cup of cream cheese and a ¾ cup condensed milk till combined.
Fold in a cup of whipped cream and rind of one lemon and 2 Tablespoons of lemon juice.
Put in a tub and place it in the freezer. 
It can freeze up to a month (when sealed properly), if it lasts that long.

Layer the dessert in a glass to see the layers.
Start with a layer of crushed biscuits/cookies.
2nd layer, the cheese cake ice-cream.
And then repeat the two layers.
Top with a by of crushed biscuits and apricot slices.

Chef’s tip: if you want slightly soft ice-cream, put it in the fridge an hour before using.
