LEMON BLUEBERRY CUPCAKES

INGREDIENTS:
500 g vanilla cake mix
125 ml lemon juice
125 ml lemon curd

TOPPING:
125 ml fresh Blueberries
30 ml water
250 g salted butter
3 cups icing sugar

METHOD:

Bake cupcakes according to package instructions, using the lemon juice for
part of the water.
Bake cupcakes for 18 minutes at 180 degrees C.
Let cool.
Simmer blueberries in water over medium heat. Use wooden spoon to stir and
crush blueberries.
Leave to cool.
Poke a hole at the top of the cupcakes and fill with curd.
Whip the butter and sugar together till fluffy. Stir in the blueberry
mixture.
Pipe over cooled cupcakes.

Easy lemon ? cupcakes filled with lemon curd and topped with blueberry
butter icing.
