1 kg stewing lamb
Salt and pepper
50 g butter
2 onions, chopped
500 ml mutton stock
5 ml mixed herbs
1 can diced tomatoes 🍅
45 ml corn flour
2 cans curried mixed vegetables
Fresh herbs 🌿 to garnish
Pat lamb dry. Season. Melt butter in a saucepan. Brown lamb. Transfer to a casserole dish.
Add onion to saucepan. Cook. Stir till lightly browned. 3 minutes.
Add stock, herbs and tomatoes 🍅 bring to a boil. Stir frequently.
Pour mixture over lamb casserole. Mix through.
Cover and cook in the oven at 180 degrees C. For 1 hour until lamb is tender.
Remove from oven. Add mixed vegetables. If stew needs thickening, mix corn flour and water to make a paste. Stir into stew.
Return to oven for 15 minutes.
Serve stew over mashed potatoes and garnish with herbs.
