JAMAICAN BEEF CURRY

MARINATING INGREDIENTS:

900 g stewing beef 🥩, cubed

1 tsp Black pepper

2 tsp onion powder

3 cloves garlic, crushed

1 Tbls curry powder

COOKING INGREDIENTS:

1 Tbls Cooking oil

1 tsp salt

3 cups boiling water

1 Tbls curry powder

3 sprigs of thyme

1 onion, finely chopped

1/2 green and red bell pepper, finely chopped

1 tsp hot pepper sauce

1 Tbls tomato sauce

2 potatoes 🥔, cut into chunks

METHOD:

Mix beef with pepper, onion powder, garlic and 1 Tbls curry powder and
marinate overnight or one hour before cooking.

Mix salt into marinated meat. Brown meat on both sides.

Add 2 cups of boiling water and stir in 1 Tbls curry powder, cover pot and
reduce heat to a simmer for 45 minutes to an hour. Add thyme, onion and
peppers and another cup of boiling  water.

Stir in the pepper and tomato sauce and potato.  Cover pot and cook for 30
more minutes, or until meat is tender and sauce has thickened.

Serve with steamed rice and vegetables.
