HOMEMADE SPICY CHICKEN AND TOMATO SAUSAGE ROLLS

INGREDIENTS:
400 g chicken breasts
1 tsp crushed garlic
1 can chopped tomatoes
½ cup breadcrumbs
3 tsp spring onion, chopped
1 tsp chili, chopped
2 tsp red Thai curry
1 Tbls fish sauce
2 eggs

METHOD:

Put The above ingredients into a food processor, blitz until combined. (It
should be rustic).

3 Tbls coriander, chopped
Salt and pepper

Fold in the herbs into the above mixture and adjust seasoning.

Sesame seeds
Egg wash
Puff pastry squares

Roll out the pastry squares.
Roll out the filling into a long sausage log.
Place the filling into the pastry. Brush edges with egg wash.
Press down to seal. Seal the edges.
Sprinkle with sesame seeds.
Bake at 180 degrees centigrade for 15-20 minutes or until golden brown.

DIPPING SAUCE:
½ cup sweet chili sauce
2 tsp soya sauce
1 tsp chopped coriander/ mint

Mix together. Rest for 15 minutes.
