HEARTY VEGETABLE STEW SEASONED WITH BEEF

INGREDIENTS:
1 lt beef stock
15 ml olive oil
500 g chuck, boned and cubed
2 onions, sliced into rings
3 cloves garlic, crushed
90 ml tomato paste
3 cups diced carrots ?
3 cups diced potatoes ?
250 g frozen green peas
2 ½ cup quartered mushrooms ?
Salt and pepper
Chopped fresh parsley

METHOD:

Bring stock to a boil. Cook for 15 minutes. Reduced to 2 cups.
Heat oil in another saucepan. Add beef, brown on both sides. Remove from
pan. Set aside.
Add onion, garlic and tomato paste. Cook for 5 minutes. Stir. Return beef
to pan.
Add reduced stock and vegetables.
Adjust seasoning.
Bring to the boil. Simmer for 45 minutes.
Ladle into soup bowls.
Garnish with parsley.

Serve warm.
