HAND RAISED CHICKEN STEW

INGREDIENTS:

60 ml sunflower oil

1 whole chicken, cut into pieces

2 onions, chopped

10 ml crushed garlic

10 ml curry powder

4 tomatoes 🍅, grated

1 pkt cream of chicken soup

Salt and pepper

Handful of basil, chopped

METHOD:

Heat oil, brown chicken pieces. Set aside.

Add onions, garlic, curry powder to saucepan. Fry till soft. Add tomatoes,
chicken soup, coconut milk and water.

Season to taste.

Return chicken to pan, add basil. Cover and simmer for 1 1/2 hours or until
chicken is tender.  Garnish with fresh basil.

Serve over pap or Ting.
