GORGONZOLA, PRUNE AND CASHEW TARTLETS

INGREDIENTS:
24 pastry tartlet shells
½ cup prunes, chopped
1 tsp brown sugar
1 ml cinnamon, ground
6 Tbls cashew nuts ?, chopped
½ cup Gorgonzola cheese, crumbled
4 Tbls Peach ? Chutney

METHOD:

Preheat oven to 180 degrees Celsius. Line tartlet shells on a baking tray.
In a bowl, mix prunes, sugar, cinnamon and nuts.
Fill tart cases with 1 tsp of prune mixture. Top with Gorgonzola cheese.
Bake for 7 minutes or until bubbling.
Drizzle with Chutney.

Serve warm!
