FRITTAFFLE  (Frittata and Waffle)


1 Tbls oil

1 red bell pepper, diced

2 cups roasted potatoes 🥔, cubed

2 cups arugula

8 pieces of bacon 🥓, broken into pieces

Salt and Pepper

8 eggs 🥚, whisked

1/2 cup Parmesan

1 cup mozzarella


Add oil to pan on medium heat.

Stir in peppers and cook till soft. Add in potatoes and warm through.

Add arugula and bacon and combine.

In a bowl, whisk eggs with cheeses and salt and pepper. Combine the egg
with the potato mixture.

Heat a waffle iron. Spoon mixture into waffle pan.

Leave to cook until eggs are set and it looks like a waffle.

Serve warm!
