FRIED PAPRIKA POTATOES πŸ₯”

INGREDIENTS: 

1/4 cup + 1 Tbls olive oil 

3 potatoes, cut into 

1-inch pieces Coarse salt 

2 onions, sliced in rings 

1/2 tsp paprika  

2 Tbls chopped flat-leaf parsley   

 

METHOD:

Heat 3 Tbls oil in skillet on medium heat. Cook potatoes, covered, for 5 minutes. Season with salt. Add remaining 2 Tbls oil and onions. Stir. Reduce heat to medium, cook, covered, for 5 minutes more.  

Uncover, toss! For 8 minutes till potatoes and onions start to brown.  

Sprinkle with paprika. Cook till tender.  

Toss with parsley and adjust seasoning.   

 

Serve as a side dish
