FLUFFY WHITE CUPCAKES

INGREDIENTS:
250 g butter, softened
400 g brown sugar, packed
10 ml vanilla extract
5 ml almond extract
6 egg whites
360 g cake flour
15 ml baking powder
250 ml milk

ICING:
250 g butter, softened
5 ml vanilla extract
4 cups icing sugar
30 ml milk

METHOD:

Preheat oven to 180 degrees C.
Cream butter and sugar. Add vanilla and almond extract.
Add flour, milk and baking powder into batter in 3 stages. Beat until
smooth.
Whip egg whites till soft peak.
Gently fold egg whites into batter. Spoon into cupcake pans and bake for
15-18 minutes.
Let cool before icing.

ICING:
Beat butter till fluffy, add vanilla. Gradually add icing sugar. Add milk.
Beat until light and fluffy.
Pipe onto cupcakes.
