FARMHOUSE VEGETABLE AND PORK SOUP

INGREDIENTS:
45 ml oil
500 g stewing pork
1 onion, diced
2 carrots 🥕, sliced
1 can diced tomatoes 🍅
6 cups chicken stock
2 tsp minced garlic
1 bay leaf 🍃
¼ tsp crushed red pepper flakes
½ cup screws pasta
Salt and pepper
4 cups chopped spinach

METHOD:

Brown the pork in the oil over medium heat. Drain off excess fat.
Return to heat, add onions and carrots. Cook till soft. Return meat to pan.
Add stock, garlic, bay leaf, pepper flakes and stir.
Simmer for 1 hour.
Add in pasta, cook for another 30 minutes. Add spinach. Cook till wilted.
Adjust seasoning.
Serve with Parmesan cheese.
