CUPPACINNO APPLE AND CINNAMON CAKE WITH CREAM CHEESE FROSTING

INGREDIENTS :
1 kg cuppacinno muffin mix
250 g butter, melted
4 eggs
500 ml milk
80 ml orange ? juice
Zest of 2 oranges
5 ml cinnamon
2 medium apples, peeled and grated

CREAM CHEESE FROSTING:
125 g butter, softened
250 g cream cheese, softened
5 ml vanilla essence
3 cups icing sugar

METHOD:

Preheat oven to 180 degrees C.
Grease 2 cake tins.
In a bowl, mix the muffin mix, butter, eggs, milk, orange juice, zest,
cinnamon and apples till smooth.
Spoon dough into cake tins.
Bake for 20-25 minutes or until skewer comes out clean.
In another bowl, beat the butter and cream cheese with electric beater till
smooth.
Stir in vanilla and icing sugar.
Beat till combined. Add more icing sugar if necessary.
Use some of the icing to sandwich the 2 layers of cake. Use the rest as
frosting on top.
