CRISP ROAST DUCK

INGREDIENTS:
3 kg whole duck
2 cups boiling water
1 Tbls salt
1 Tbls black pepper

METHOD:

Preheat oven to 200 degrees C.
Remove excess fat from body. Rinse duck inside out.
Prick skin with fork. Pour boiling water over duck.
Pat dry with paper towel. Rub with salt and pepper.
Roast duck, breast side up for 45 minutes.
Turn duck over and roast for another 45 minutes.
Turn again, roast for another 45 minutes.
Total roasting time should be 2 ½ hours.

Serve warm with potatoes.
