CORN AND BABY MARROW FRITTATA

INGREDIENTS:
45 ml olive oil
1 onion, chopped
2 cloves garlic, crushed
1 baby marrow, sliced
1 tomato 🍅 peeled and diced
1 can whole kernel corn 🌽
5 ml ground cumin
5 ml ground coriander
Salt and pepper
6 eggs
125 ml milk
100 g grated cheddar cheese 🧀

METHOD:

Heat oil, add onions, garlic, marrow, tomatoes and corn.
Sauté until vegetables are soft.
Season with cumin, coriander, salt and pepper.
Preheat oven to 180 degrees C.
Mix eggs and half cup of milk.
Once vegetables are cooked, sprinkle with cheese. Pour egg mixture into
pan. Transfer pan to oven. Bake for 30-35 minutés.

Serve sliced into wedges. Serve with Salad.
