COCONUT JAM SQUARES

INGREDIENTS:
500 ml cake flour
10 ml baking powder
1 ml salt
125 ml sugar
100 g butter
1 large egg
60 ml milk
125 ml smooth apricot jam

 

TOPPING:
1 egg
125 ml sugar
375 ml dedicated coconut
30 ml milk
5 ml vanilla essence

Sift dry ingredients. Run in butter.
Beat egg and milk. Mix into dry ingredients. Press into greased Swiss roll tin.
Spread with jam. 

TOPPING:
Beat egg, add sugar and beat again. Add remaining ingredients. Spread ontop of jam.
Bake in a preheated oven at 200 degrees C for 15-20 minutes.
Cut into squares while still warm.
