1 cup cake flour
1 Tbls cornstarch
1/2 Tbls baking powder
1/2 tsp salt
3/4 cup mint chocolate chips
1 tsp vanilla essence
1/2 cup vanilla Greek yogurt
1/2 cup brown sugar, lightly packed
1/4 cup coconut 🥥 oil (measure when melted)
Preheat oven to 180 degrees C.
Grease a regular sized muffin tin and dust with flour.
Sift flour, corn flour, baking powder and salt into a bowl. Toss with chocolate chips.
In another bowl, mix vanilla, egg, yogurt, brown sugar and coconut oil. Whisk together till smooth.
Add dry ingredients to wet ingredients and stir until combined.
Spoon into prepared muffin tins. Sprinkle with brown sugar on-top (optional).
Bake for 18-22 minutes or until lightly browned on the edges.
Remove and allow to cool.
Can be refrigerated for 2-3 days in an airtight container.
