CHOC-MINT SELF SAUCING PUDDING

INGREDIENTS:
500 g chocolate cake mix
3 eggs
250 ml oil
250 ml hot coffee

SYRUP:
500 ml boiling water
100 g brown sugar
30 ml cocoa powder
5 ml vanilla essence
Milk chocolate for topping

METHOD:

Preheat oven to 180 degrees C. Grease a 2 lt oven dish.

Make sponge cake according to box instructions. Spoon into prepared baking
dish and smooth the top.

SYRUP: mix boiling water, sugar, cocoa and vanilla. Stir until sugar has
dissolved.
Pour syrup over dough, bake for 45 minutes.
Sprinkle with grated chocolate if desired.

Serve hot with whipped cream or ice cream ? and strawberries ?.
