CHILI CHUTNEY SAUCY PORTUGUESE PIRI-PIRI CHICKEN BURGERS

CHICKEN MARINADE

2 tsp crushed garlic

1 tsp crushed bay leaf

1 Tbls paprika

½ cup beer

½ cup dry white wine

100 ml lemon juice

2 Tbls olive oil
½ cup chutney

6 large chicken breasts, flattened
Mix all the marinade ingredients together. 
Marinate chicken for about 20 hours. 
Grill the chicken.

PIRI-PIRI SAUCE

4 Tbls olive oil

½ cup finely chopped onions

2 tsp crushed garlic

2 tsp chopped red chillis

1 tsp crushed ginger

½ cup chutney

1 tsp paprika

2 Tbls red wine vinegar

1 tsp chopped fresh coriander

Salt and pepper

METHOD:
Cook the onions, garlic, chili and ginger in hot oil till soft.

Add the rest of the ingredients and bring to the boil.

Blend till smooth.

Add a bit of sour cream (optional).
Serve on a Portuguese Roll with some tomato, lettuce and the sauce. 
Serve with fries or wedges.
