1 cup butter
2 cups raisins 🍇
1 ½ Tbls Vanilla essence
1 Tbls ground cinnamon
2 ¼ cup flour
1 ½ tsp salt
½ tsp baking soda
½ cup sugar
1 cup golden brown sugar
Preheat oven to 180 degrees C. Prepare 2 baking sheets.
Melt butter in saucepan. Add raisins, vanilla and cinnamon. Stir to blend.
Cover and simmer for 10 minutes. Keep it covered and let it sit for 50 minutes.
In a bowl, combine flour, salt and baking soda. Set aside. Add both sugars.
Once raisins are soaked, add to sugar mixture. Add eggs and mix.
Fold in the dry ingredients.
Use a cookie scoop to drop batter onto baking sheet.
Bake for 10-12 minutes.
Leave to cool for 20 minutes.
