CHERRY TOMATO, BEEF AND HALLOUMI SKEWERS

All you will need is…

INGREDIENTS:

500 g beef, cubed

½ tsp minced garlic

½ tsp Dijon mustard

Salt and pepper

2 tsp lemon juice

1.5 tsp red wine vinegar

2 Tbls olive oil

½ tsp chopped oregano

1 pint cherry tomatoes

Halloumi cheese, cut into squares

If you’re using wooden skewers, soak them in water for 30 minutes (to
prevent burning).

METHOD:

Whisk the garlic, mustard, lemon juice, salt & pepper and vinegar together.

Slowly whisk in oil. Stir in the oregano.

Place the beef, cherry tomatoes and halloumi on the skewers. Alternating
the 3 ingredients.

Grill on a griddle pan or in an oven.

Brush the vinaigrette onto the skewers while grilling.

Keep an eye on them so they don’t burn.

Serve warm with the extra vinaigrette.
