CAPRESE STYLE PORTOBELLO MUSHROOM

INGREDIENTS:
6 large brown mushrooms, stems removed
200 g cherry tomatoes ?, halved
4 Tbls fresh basil ?, chopped
½ cup sweet chili sauce
2 tsp lemon ? juice
Salt and pepper
1 ¼ cup mozzarella cheese ?

METHOD:

Pre-heat oven to 200 degrees Celsius.
Brush mushrooms ? with olive oil and place on a baking tray.
Mix tomatoes, basil, chutney and lemon juice together.
Adjust seasoning.
Sprinkle cheese over mushrooms.
Spoon the tomato mixture on each mushroom.
Bake in the oven until cheese melts.
Drizzle on top with extra Chutney.
