BREAKFAST SALAD

Have you started with your New Years resolutions yet?

If you want to start practicing healthy eating, why not start today?

A light salad for brunch

SALAD:

6 eggs, boiled

1 avocado, sliced

1 fennel bulb, sliced

200 g asparagus, blanched

1 pkt prosciutto

METHOD:

Wrap the prosciutto around the asparagus.

Cut the eggs into quarters.

Assemble the salad.

SWEET CHILI SALAD:

1 red chili, chopped

2 Tbls coriander, chopped

4 Tbls balsamic vinegar

125 ml olive oil

4 Tbls sweet chili sauce

Salt and pepper

METHOD:

Whisk all the ingredients together and adjust the seasoning.
