BREAKFAST HASH WITH EGGS 🍳

INGREDIENTS:
800 g new potatoes, scrubbed clean
3 Tbls olive oil
6 smoked rashers,chopped
2 tomatoes 🍅, roughly chopped
4 spring onions, finely chopped
4 large eggs 

 

METHOD:

Chop potatoes into small cubes.
Heat oil on medium heat. Add potatoes and cook for 20 minutes till golden. Stir occasionally.
Add rashers to potatoes and cook till crisp.
Add tomatoes. Toss well.
Stir in spring onions and adjust seasoning.
Make 4 holes in-between the hash. Crack eggs into centres. Place the pan into oven. 180 degrees C. Til the egg whites are set and the yolks hot. 

Serve warm.!
