BEEF AND BEAN SOUP

INGREDIENTS: 

2 Tbls canola oil 

1 kg beef stew meat, cubed 

2 cups chopped onion 

2 cups chopped carrots  

4 garlic cloves, minced 

2 cups water  

1 1/2 tsp salt 

1 tsp Black Pepper 

1 tsp dried thyme 

1/2 tsp dried sage 

4 bay leaves  

300 ml beef stock 

3 cans butter beans  

 

METHOD: 

Heat oil. Brown beef đŸ„© on all sides. Work in batches. Set aside.  

Add 1 Tbls oil in the same pan, add onion, carrot and garlic. SautĂ© for 5 minutes.  

Return beef to pan. Stir in water, salt and pepper, thyme, sage, bay leaves, stock and beans.  

Bring to a simmer for about 1 1/2 hours until beef in tender.  

Discard bay leaves.  

Adjust seasoning.   

Serve warm!
