BASIL PESTO

Calling all pesto lovers!

You will love this I promise.

We are definitely sold.

RECIPE AND METHOD:

So in a food processor or blender, throw in a ½ cup of basil, and ½ a cup
of whatever other leaves you prefer. This could be baby spinach, rocket,
whatever.

Add a ¼ cup of Parmesan cheese, season with some salt and pepper and then
throw in your garlic.

Add to that a ¼ cup of pine nuts and a squeeze of lemon juice.

Blend all of the up and gradually add a cup or less of olive oil (until it
reaches the consistency you like).

Taste it to adjust the seasoning.

Serve this up on some bruschetta or pasta.
