ASPARAGUS AND CHEDDAR TART

INGREDIENTS:
Flour, for dusting
1 sheet puff pastry
200 g cheddar cheese, grated
3 Tbls chopped fresh coriander
500-750 g medium asparagus
1 Tbls olive oil
Salt and pepper

METHOD:

Preheat oven to 200 degrees C.
On a floured surface, roll out pastry. Place over Tart tin and trim edges.
Blind bake for 10 minutes.
Remove from oven, sprinkle with cheddar and parsley.
Tail the asparagus to fit into Tart tin. Arrange single layer over cheese.
Brush with oil and season.
Bake for 20-25 minutes.
