120 g flour
5 ml baking powder
5 ml cinnamon
100 g sugar
2 eggs, beaten
150 g butter, melted
1 can apricot halves, drained
65 ml flaked almonds
Extra cinnamon and sugar for sprinkling
Preheat oven to 180 degrees C. Grease a square cake tin.
Sift the dry ingredients together, mix in the sugar.
Add eggs and butter to dry ingredients. Mix well.
Pour into prepared cake tin. Place apricots cut side up ontop of mixture.
Sprinkle with almonds and the cinnamon and sugar mixture.
Bake for 45-50 minutes.
Cut into squares.
Serve warm or cold with whipped cream.
